One of his favourite times of the year is game season, a few weeks a year that dedicated foodies look forward to annually, as it shows chef Seamus Commons at his best, working with the produce he loves most – the finest game his suppliers can provide him with, or that he can shoot, trap or catch himself!
Focusing on rabbit, hare, wild duck, venison, teal, mallard, partridge, pheasant and whatever else is available, Seamus creates stunning menus during the height of the game season every year. Award-winning sommelier Nick Faujours then carefully selects the most appropriate wines from Knockranny House Hotel’s cellars to match, and the results are sublime!
This year’s game weekend at Knockranny House Hotel takes place over the 17th and 18th November, and features a sophisticated, elegant and delicious tasting menu tasting menu designed to showcase the finest Irish game, including dishes such as a wild Irish rabbit pithivier with smoked bacon, sprouts and chestnut, a breast of mallard with orange and clove and offal sausage, and a loin of Sika venison with slow cooked shoulder, beetroot, chocolate, hazelnut and gin.
The gourmet game weekend package at Knockranny House Hotel includes two nights’ bed and full Irish breakfast, the specially designed game tasting menu served in the award-winning La Fougère restaurant on one evening, and costs €199 per person sharing. A non-resident package is also available with the tasting menu for €75 per person sharing. Matching wines are priced at €35pp
