Knockranny House Hotel & Spa is preparing for its hotly anticipated annual celebration of game, showcasing all the skills of chef Seamus Commons and the hotel’s sommelier Nick Faujours, as well as the relaxing setting and warm welcome of one of the country’s leading food destinations.
This year’s game weekend takes place on Friday 13th & Saturday 14th November, one of the events dedicated foodies look forward to annually, as it shows chef Seamus Commons at his best, working with the produce he loves most – the finest game his suppliers can provide him with, or that he can shoot, trap or catch himself!
Focusing on rabbit, hare, wild duck, venison, teal, mallard, partridge, pheasant and whatever else is available, Seamus creates stunning menus during the height of the game season every year. Nick Faujours then carefully selects the most appropriate wines from Knockranny House Hotel’s cellars to match, and the results are sublime!
The full, gourmet game weekend package at Knockranny House Hotel begins with a tasting on Friday evening of Seamus’ game stew, followed over the course of the weekend by a master game demonstration by Seamus with a tutored wine tasting from Nick Faujours, Knockranny’s award-winning sommelier and a cocktail masterclass..
On Saturday 14th November there is also a guided mushroom foraging in Knockranny Woods, led by Will Williams from Walk on the Wildside to see how and where mushrooms grow in their natural habitat. Participants will learn identification techniques and points to watch out for when collecting them, and then will be picking and cooking mushrooms outdoors over a campfire to sample the flavours of this wild crop. And then Saturday evening sees the highlight of the annual game weekend – the seven-course game tasting menu from Seamus Commons in La Fougère Restaurant.
One night B & B with the tasting menu, wine tasting and cooking demonstration costs €135 per person sharing, and the two-night package including all the activities costs from €199 per person sharing.
